In 2013, Rémy d’Aubreby and Pierre Dessy met during a conversation about their shared passion for beer and began considering the creation of their own brewery.
Rémy, issu d’une famille franco-belge de brasseurs depuis 4 générations, décide de concrétiser ce projet avec Pierre. La brasserie familiale de Rémy, « Les Enfants de Gayant », avait été vendue en 2010, mais sa passion pour la bière, nourrie depuis l’enfance, s’est renforcée grâce à l’expérience de son père Patrick.
Pierre, lié à la brasserie Verhaeghe par sa grand-mère Geneviève, partage également cette passion, influencé par son oncle ingénieur brasseur, Alain Dessy. Dès ses études, il brasse sa première bière amateur dans son garage, remportant en 2014 le concours Brouwland.
In 2014, the project took shape with the search for funding and land in Frameries, across the SPARKOH!. The site, located on former mining grounds, uses water from the city network rather than groundwater due to the fragility of the soil.
This detail inspired the name of the brewery : 3F, referring to an anecdote about the three actives fountains of Mons.
Construction was completed in 2016, with the first batches brewed. After two years of refinement, the recipes were finalised in 2018 under the name « Dominicains »
